Do yourself a favor and get your knives sharpened by an expert. I have been taking my kitchen knives to Cam (Razor's Edge) for a few years, and I am always excited to get them back. He has a multi-step process that makes them "razor" sharp, making them time savers.
Slicing and dicing is so much easier with a sharp blade.

I have known Cameron for many years but as a fellow Chef always felt kind of silly to ask him to do my knives for me. The three kitchen knives I had him sharpen have been in my possession for over thirty years. That is a lot of chopping!
Took the hollow out of my Wusthof Chefs knife and put the tip back on! Amazing restoration.
Mandolin is back to its original condition as well.
